Motsu-nabe is the food served in a pot which makes the giblets of beef or pork a principal material. I also say “Hormone Nabe”. It’s said to be the one which started as local food from Fukuoka-shi, Fukuoka vicinity and came into fashion in a various part of Japan.
Soup stock is seasoned with soy sauce and fermented soybean paste and giblets, leek, cabbage, garlic and red chili pepper are put in during it. The one which is boiled and eaten puts this over a fire, and is general. After eating giblets and vegetables, the “Shime” which puts noodles of Chinese-style hotchpotch in remaining soup is also popular.
It’s popular with Motsukou even in the Motsu-nabe speciality store in Fukuoka. A dish like the Mizutaki-Nabe in which 4 kinds of giblets of a cow made in Japan are put. It’s also the feature to put in skin of Chinese meat dumplings on the pot.
